This Bok Choy Stir Fry Recipe is one you’ll make again and again. At least I did! This should be enough for about 4 servings.
Bok Choy Stir Fry Recipe Ingredients:
- 1 tablespoon sesame oil
- 1 clove garlic
- 1/2 medium-sized onion
- 1β4 teaspoon ground ginger
- 1β4 teaspoon ground black pepper
- 2 heads of bok choy
- 1 cup chopped mushrooms
- 1 cup chicken broth
- 1β4 cup soy sauce
- 2 tablespoon brown sugar
- 1 tablespoon rice flour
- 1 lb ground turkey
- 2 cups rice
Bok Choy Stir Fry Recipe Directions:
Start cooking your rice. I have a rice cooker that takes about an hour to cook. I prefer short-grain brown rice. This is a wonderful kitchen appliance to have because it cooks the rice perfectly and you can just let it do its thing while you’re creating the rest of the meal. This is the one that I have – Aroma Housewares ARC-2000ASB Professional 20-Cup Rice Cooker.
Chop your garlic, onion, mushrooms, and bok choy, separating the leaves from the stems.
Heat oil in saucepan over medium heat
Add your garlic, onion, mushrooms, ginger, black pepper, and bok choy stems for 10 minutes. Cover pan to soften the mushrooms and stems. I donβt add any salt to this meal because we’ll be using soy sauce.
In a bowl, combine soy sauce, sugar, and rice flour. Add to the pan along with the cup of chicken broth and bok choy leaves. Let simmer for 30 min.
In another pan start cooking your ground turkey. This takes about 20 minutes for me. Break it up into pieces and dab up the fat as it cooks with some paper towels.
Add the ground turkey pieces to the pan filled with bok choy to absorb some of the sauce for the last 10 minutes.
Serve on top of your rice and enjoy π
