This Bok Choy Stir Fry Recipe is one you’ll make again and again. At least I did! This should be enough for about 4 servings.

  • 1 tablespoon sesame oil
  • 1 clove garlic
  • 1/2 medium-sized onion
  • 1⁄4 teaspoon ground ginger
  • 1⁄4 teaspoon ground black pepper
  • 2 heads of bok choy
  • 1 cup chopped mushrooms
  • 1 cup chicken broth
  • 1⁄4 cup soy sauce
  • 2 tablespoon brown sugar
  • 1 tablespoon rice flour
  • 1 lb ground turkey
  • 2 cups rice

Start cooking your rice. I have a rice cooker that takes about an hour to cook. I prefer short-grain brown rice. This is a wonderful kitchen appliance to have because it cooks the rice perfectly and you can just let it do its thing while you’re creating the rest of the meal. This is the one that I have – Aroma Housewares ARC-2000ASB Professional 20-Cup Rice Cooker.

Add your garlic, onion, mushrooms, ginger, black pepper, and bok choy stems for 10 minutes. Cover pan to soften the mushrooms and stems. I don’t add any salt to this meal because we’ll be using soy sauce.

Bok Choy Stir FryIn a bowl, combine soy sauce, sugar, and rice flour. Add to the pan along with the cup of chicken broth and bok choy leaves. Let simmer for 30 min.

In another pan start cooking your ground turkey. This takes about 20 minutes for me. Break it up into pieces and dab up the fat as it cooks with some paper towels.

Add the ground turkey pieces to the pan filled with bok choy to absorb some of the sauce for the last 10 minutes.
