- 2 zucchini, sliced
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- Salt and pepper
- Marinara sauce
Slice zucchini and turn the oven on to 325.
Dip your zucchini slices into a bowl of flour, then in a bowl of the two beaten eggs, and then into a mixture of shaved Parmesan and breadcrumbs.
Add salt and pepper to the tops and place the zucchini slices on a baking sheet. Cook 10 minutes and then flip them and continue cooking for another 10 minutes.
Eat with your favorite Marinara sauce or make your own for dipping.
