I try to exercise every day, even if it is only a nice walk in the morning or evening. I also try to incorporate healthy meals into my diet. I’m not an extremist. I love me some good food. When I go out to eat, I’ll get the rack of baby back ribs. Everything in moderation. But typically, my meals lean towards healthy and nutritional.

I really enjoy how much mashed cauliflower tastes like mashed potatoes. This is a low-carb, low-calorie alternative that, in my opinion, tastes just as good.

  • 1 head of cauliflower
  • 2 tablespoons of butter
  • 2 tablespoons of sour cream
  • 2 tablespoons of grated Parmesan cheese
  • 2 cloves of garlic
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper
  • Green onions (for topping)
Garlic Mashed Cauliflower Recipe:

First, you’ll want to chop your cauliflower into pieces to steam.

cauliflowerUse a saucepan with a steamer insert. Fill water just below the steamer and add cauliflower pieces. Cover with a lid over medium heat for about 25 minutes, or until cauliflower is tender.

seasoningThe picture above shows everything else we’ll be adding to the dish. It’s really not much, but tastes so good! Chop your 2 cloves of garlic into fine pieces and cook in a small skillet over medium heat with 1 tablespoon of the butter for about 4 minutes.

garlicLet the cauliflower cool for a few minutes before adding to a food processor. I’m a big fan of food processors. When I discovered I’d never have to chop another onion I was ecstatic.! I have a Ninja and it’s been working great. You can chop or Purée with it – Ninja Master Prep Chopper.

food-processorThe cauliflower may need to be added in a couple of batches depending on how much you have. Blend until vegetables are creamy.

garlic mashed cauliflowerNext, you’ll want to remove the steamer and water from the saucepan and add the cauliflower back into it. Now add the garlic, sour cream, remaining butter, salt, pepper, and Parmesan cheese. Stir well.

  6. Serve mashed cauliflower with diced green onions on top for garnish.
  7. Enjoy!

  1. I made this as one of my side dishes last night. But it turned into the star of the plate!
    I loved the sauteed garlic and the amount of sour cream is perfect – you taste it but the cauliflower is still the main attraction
