This Collard Greens Soup Recipe is great on a cold day. This is a soup we typically have with our garden greens. You can add collards, mustard greens, or cabbage, though we usually make it with collard greens. It’s great to have when it’s cold out or when you have a lot of greens to eat from your garden. 😊
Ingredients:
- Two bunches of collard greens (12+ leaves)
- A few mustard green leaves (optional – adds more flavor)
- 1 onion, chopped
- 1 cup chopped carrots
- 6 oz bacon
- 2 cups chicken broth
- 2 cups water
- 1 80z can of tomato sauce
- a pinch of celery seed
- 1 can of navy beans
Directions:
Chop collard green leaves, carrots, onions, and bacon, and add into a large pot. Add water, sauce, and chicken broth. Let it cook on medium heat for about 20 minutes, then add beans and celery seed.
Let the soup simmer for about an hour with the lid on.
Add any salt, pepper, and cheese to taste.
