This Goat Cheese Stuffed Pepper Recipe is a quick and fun recipe as an appetizer or snack. One of my favorite flavor combinations includes goat cheese, artichoke hearts, and lemon.
Ingredients:
- 6 mini sweet peppers
- 4oz Goat cheese
- 6 quarters of artichoke hearts
- 2 teaspoons of lemon juice
- 1 clove garlic
- 1 green onion
- 1/4 teaspoon pepper
Preheat the oven to 350.
Rinse and cut the tops off the peppers and remove the seeds.
Place the peppers on a baking sheet and cook them for 10 minutes on one side. Then flip them and cook for another 10 minutes.
While the peppers are cooking, add the garlic to a food processor to chop it finely. Then add the remaining ingredients to the food processor. This will become a chunky filling for the peppers.
Once the peppers are done let them cool for a few minutes. You may want to place them on paper towels to dry them a bit. Then fill the peppers. You can try to use a spoon but eventually, it will cover your hands.
Add the peppers back in the oven for 10 more minutes.
Let them cool for a few minutes (the cheese can get hot!)
