This week our vegetable spotlight is on sweet peppers. This Goat Cheese Stuffed Pepper Recipe is a quick and fun recipe as an appetizer or snack. One of my favorite flavor combinations includes goat cheese, artichoke hearts, and lemon. And if you missed our spotlight post you can check it out here: Vegetable Spotlight – Sweet Peppers.
- 6 mini sweet peppers
- 4oz Goat cheese
- 6 quarters of artichoke hearts
- 2 teaspoons of lemon juice
- 1 clove garlic
- 1 green onion
- 1/4 teaspoon pepper
Preheat the oven to 350.
Rinse and cut the tops off the peppers and remove the seeds.
Place the peppers on a baking sheet and cook them for 10 minutes on one side. Then flip them and cook for another 10 minutes.
While the peppers are cooking, add the garlic to a food processor to chop it finely. Then add the remaining ingredients to the food processor. This will become a chunky filling for the peppers.
Once the peppers are done let them cool for a few minutes. You may want to place them on paper towels to dry them a bit. Then fill the peppers. You can try to use a spoon but eventually, it will cover your hands.
Add the peppers back in the oven for 10 more minutes.
Let them cool for a few minutes (the cheese can get hot!)
Serve and enjoy this Goat Cheese Stuffed Pepper Recipe!
If you end up with leftovers you can reheat them or have them cold, both ways taste great!
