Goat Cheese Stuffed Pepper Recipe

This Goat Cheese Stuffed Pepper Recipe is a quick and fun recipe as an appetizer or snack. One of my favorite flavor combinations includes goat cheese, artichoke hearts, and lemon.

Goat Cheese Stuffed PepperIngredients:

  • 6 mini sweet peppers
  • 4oz Goat cheese
  • 6 quarters of artichoke hearts
  • 2 teaspoons of lemon juice
  • 1 clove garlic
  • 1 green onion
  • 1/4 teaspoon pepper

Goat Cheese Stuffed Pepper Recipe IngredientsPreheat the oven to 350.

Rinse and cut the tops off the peppers and remove the seeds.

sweet peppersPlace the peppers on a baking sheet and cook them for 10 minutes on one side. Then flip them and cook for another 10 minutes.

While the peppers are cooking, add the garlic to a food processor to chop it finely. Then add the remaining ingredients to the food processor. This will become a chunky filling for the peppers.

artichoke goat cheese spreadOnce the peppers are done let them cool for a few minutes. You may want to place them on paper towels to dry them a bit. Then fill the peppers. You can try to use a spoon but eventually, it will cover your hands.

Let them cool for a few minutes (the cheese can get hot!)
